Yesterday Adam and I celebrated our two year wedding anniversary. We had reservations at one of our favorite local spots for drinks and small plates. We ordered a ton of food and Adam actually stepped out of his food comfort zone (i.e. pizza) to try some new things. He ate and loved some arugula though caramelized onions were not quite as much of a hit. All in all dinner was delicious and the night couldn't have been a more perfect way to celebrate two years of wedded bliss (cheesy I know but not any less true).
The real highlight of our anniversary was much earlier in the day, though. Adam woke me up to an absolutely delicious surprise breakfast!
I love breakfast. It's pretty important to note that Adam had never really cooked before we met. Serving in the military didn't really afford a lot of opportunities for home cooked meals or experimenting with much else than ramen noodles and bagel bites. So any time he cooks, it is a pretty big feat for us both.

On top of being thrilled any time he cooks, he made me breakfast. I love breakfast! I could honestly eat nothing but eggs and pancakes for the rest of my life and would die a happy well fed woman. Needless to say, waking up to my favorite meal being made for me was the perfect start to my anniversary. Besides, what girl doesn't love having her man cooking for her?
Cashew and Banana Pancakes
What you need:
- Your Favorite Pancake Mix
- Milk
- Canola Oil
- 1/2 a Banana
- 1/2 tsp Cinnamon
- 1/2 tsp Vanilla
- 6-8 Cashews finely chopped
- Maple syrup and Butter
Finely chop your cashews and cut the banana into coins. Make the pancake according to the packaging. Combine the vanilla and cinnamon and mix into the batter.
Add in the banana and cashews and mix until smooth.
Spray cooking oil into a pan set to medium. Using a small ladle, pour batter into pan. Cook until bubbles appear on top and sides have dried. Flip and continue cooking on other side.
Top your pancakes with pats of butter, maple syrup, sliced bananas, or whatever else you like.
Serve to your throughly impressed and greatly appreciative wife and sit back while you win all sorts of husband bonus points.

Banana Cashew Pancakes
Your Favorite Pancake Mix
Milk
Canola Oil
1/2 a Banana
1/2 tsp Cinnamon
1/2 tsp Vanilla
6-8 Cashews finely chopped

Finely chop your cashews and slice the banana into coins. Make the pancake mix according to the package and add in the cinnamon and vanilla. Add int he cashews and fold in the bananas. Heat a pan on medium. Spray with cooking oil and ladle in pancake mix. Cook until bubbles appear on top and sides have dried. Flip and cook until done. Plate with favorite toppings.
